Tofu Nugget Recipe

   I apologize to those who were waiting for the Tofu Nugget recipe. Here it is! A little later than promised, but that's because the first recipe I tried was terrible and I had to revise it. So,  I hope you enjoy my Tofu Nugget recipe (revised)

You will need:
Extra Firm Tofu (pressed to expel excess water and cut into nugget sized pieces...about 1"x 2")
Flour
Baking Powder
Garlic Powder
Cider Vinegar
Apple Juice
Water

   Take your apple juice and cider vinegar and mix about 2 parts juice to one part vinegar in a dish large enough to marinate all of your tofu. Put you pressed/cut tofu in the dish and leave it covered for a few hours.
   When the tofu is finished marinating take them out and dab dry your nugget's outside so the batter will stick to them better. Now make the batter. Take about a cup of flour, 2 tsp. baking powder and your garlic powder, mix them together. Add enough water to make a thick batter, thick enough to cling to the nuggets, but thin enough not to turn into a cake when we fry it. Throw your tofu nuggets into the batter and then deep fry them until golden brown. Make your favorite dipping sauce and enjoy!
  

**The tempura styled batter turns out much better than the dry battered recipe I tried first...MUCH BETTER! And don't forget to press your tofu, it helps give it a tougher consistency which is what you want when trying to make tofu imitate meat.

Tofu Nuggets

   I came across an idea for tofu nuggets online. It looked simple enough, but have not tried it yet. I'm going to see if I can make them for dinner to see if it is all it is talked up to be. If they turn out pretty tasty I will put the recipe I use in my next post, let you know how they turned out, and hopefully some tips on how to improve on it. Tofu Nuggets, here I come...wish me luck! Love, Peace, and Candy Grease!

Mushroom Burrito Fit For A King

   So I was looking for something to eat for lunch today and decided to go to the leftovers. I had some tomato basil hummus, a handful of baby porta. mushrooms, a bag of salad, and some tortillas that needed to be ate before they spoiled. This is one of the tastiest little lunches I have had in a while. Here's what I did:

You need:
Tomato basil hummus
Portabella mushrooms (chopped)
Greens of your choice (I used basic Iceberg salad from the bag)
Tortillas
Garlic (freshly chopped or minced...fresh is always better)
Olive oil
Liquid Smoke
Garlic Powder

   First take your skillet and drizzle about a tsp. of olive oil to coat the pan. Throw your chopped mushrooms in the pan with the garlic, a few drops of liquid smoke, and garlic powder to taste. Let it fry until the mushrooms are starting to get soft and the garlic is browning. When that is done or while it is frying, depending on your kitchen skills, take your tortillas out and smear them with your tomato basil hummus. Put the mushroom mix on top of the hummus and slap your greens on top of that. Now roll it closed and here comes the best part. Take your skillet, clean it up, and put the heat back on. Now take that tired, soft tortilla and more crunch by dry roasting both sides until they are golden brown (pressing down with a spatula while roasting helps make a good looking burrito). There you go, a mushroom burrito that tastes great and is fit for a king!... a Vegan King!

Top 5 Easy Vegan Snacks

1) Celery and peanut butter is a good traditional snack food. You can also liven it up a little by adding raisins and other dried fruit, or by using different butter...maybe almond, cashew or macadamia butter?

2) Popcorn is another easy vegan snack. Plain or with salt is a favorite for many, but if you are looking for a little more fun or substance try experimenting with different things. One of my favorite ways to prepare popcorn is to drizzle it with a little warm coconut oil and sprinkle it with garlic and onion powder...mm mm.

3) Having prepared "Veggie Sticks" is always a convenient way to snack healthy. I like to keep a plate of carrots, celery, cucumber, broccoli, apples, oranges and assorted berries in my fridge that I can eat from whenever I get hungry. Plus, you don't have to cook and when you don't cook your food, it's not  just easier, it digests better and gives you more nutrition for your dollar.

4) Juice and smoothies makes a great snack. Perhaps the smoothie from breakfast...did someone say leftovers?

5) Last but certainly not least, every one's favorite, drum roll please..... THE SALAD. Make a salad or as I like to call it, Raw Vegan Stew! Whatever you like, put it in a dish and drizzle it with something else that you like. A tasty salad I eat is made with diced apples, shredded carrots and raisins with cashew butter and agave nectar. But anything works!

"I Can't Believe It's Not Beef" Tofu Jerky

   I just made my first batch of Tofu Jerky....and it was so much better than expected. Most of the time when I think about tofu, I think bland. Tofu Jerky was anything but bland; in fact, it was really tasty! I took:
Soy Sauce,
Water,
Minced Garlic,
Garlic Powder,
Onion Powder,
Cheyenne Pepper,
Liquid Smoke,
Dark Brown Sugar,
Salt,
and a Dehydrator...
...mix ingredients to taste in a 3in. deep dish and then cut my Tofu Jerky strips. When cutting your pieces of Tofu Jerky make sure that you slice them about 1/8in. thick. Put your Tofu Jerky strips in your marinade and let it sit for a few hours to soak up the flavor.... you can also press your tofu before you get started to get rid of any excess water and to allow your jerky strips to soak up more marinade. After your Tofu Jerky is done marinating put them in your dehydrator until jerky-like and brown. I used the vegetable/fruit setting and let it sit through the night, about 8 hours, and it was almost perfect. I should also state that if you cut your Tofu Jerky too thick or do not marinate them enough you run the risk of eating Tofu Jerky that tastes like a plain rice noodle and that's not the flavor we are looking for. So get in your kitchen and start experimenting with this new favorite, Tofu Jerky! Enjoy!
